Today I took some chicken fajita fixins out of the freezer...apparently I freezed some chicken, onions and peppers in a fajita like sauce a while back...what to do, what to do.
Salad...in a bowl, with a bit of cheese...and fajita stuff. Not enough. Corn chips? Tortillas? Out, but I did have cormeal.
POLENTA!
So I made polenta for the first time today.
1 cup coarse corn meal, 2 tsp salt, 4.5 cups of water (google the rest)
I was going to grill it once it was done, but my propane is gone, so I brushed it with oil and tossed a bit of taco seasoning on it and broiled it. It took about 8-10 minutes of broiling VERY close to the element to get it "crispish" Then I melted cheese on top. Salad, Polenta wedges with chicken fajita "stuff" over the top with black olives. YUM! It would have been better with guac and sour cream, but still yummy!
Now I have left over polenta and cheese wedges that I will dip into spaghetti sauce.
weird....a really strange non bread cornbread type consistency. Not much flavour...except for the cheese. Next time I will make it with veggie stock. But still, a really good base for sauces!
